Dinner tonight is creamy Italian chicken served over rice. This slow cooker recipe is a staple in our home! Not sure where this recipe originated, but I have seen it all over Pinterest.
Serve with steamed broccoli as a side!
You'll need.... YOUR SLOW COOKER!
Ingredients:
- 1 lb. chicken breasts (boneless and skinless) (I stick 'em in frozen)
- 1 can cream of mushroom soup
- 1 packet Italian dressing
- 1 8oz. package of cream cheese (I use 1/3 less fat so I can eat more.... ha ha)
- 8 oz. fresh mushrooms, sliced
- 1 cup uncooked rice
- broccoli florets (for your side dish)
Directions:
1. In a small mixing bowl, mix the cream of mushroom, Italian dressing packet, and cream cheese.
2. Place chicken breasts in bottom of slow cooker
3. Smear cream cheese mixture over top and close the lid!
4. Cook 8 hours on low
.... 8 or so hours later....
5. Shred chicken and stir back in.
6. Toss in mushrooms and stir lightly
7. Let cook another 20-30 minutes or so (just long enough to steam some broccoli and cook the rice (or pasta)
8. Steam broccoli and cook rice according to package directions
Serve Italian chicken over rice and broccoli on the side. Enjoy!

Description
Recipe makes a double batch so you can freeze. That's what I did today... Made two and wrapped them in big ziploc bags. Labeled the bags so when I thaw I don't have to look up cooking temp!

Ingredients
2 beaten eggs
2 slices bread -crumbs
1/2 cup water
1/2 c. chopped onion
1/2 c. green pepper
1 tsp. Italian seasoning
2 lbs. ground beef
2 tbsp. ketchup and/or bbq sauce

Preparation
1. Mix all ingredients except meat in large bowl
2. add meat and mix well
3. make loaf and place in a shallow baking dish
4. bake @ 350 degrees 45 - 50 minutes

Makes 8 servings (I divide it in half for two small meat loafs - just enough for 2 people to have leftovers)
